Friday FoodGawker Favorites


Happy Friday!

What a beautiful Friday it is supposed to be!  I have already been to my sweet girls Spring Bonnet Parade at school this morning and it was PRECIOUS!  From Infants to Kindergarten they march around (babies rolled in their cribs) and sing Spring songs and just celebrate!

I have watched my baby girl participate in this for the last almost 5 years and this was the last one before she moves on to her big girl school….sniff sniff

I can’t believe this much time has passed…..ok must move on to Friday FoodGawker Favs before I just drop it all and start rifling through baby pictures and tearing up…..ok so I am already tearing up

Favorite Deconstructed Italian: Skillet Lasagna One pan, cooks in less than one hour, and tastes like the Italian old country comfort food – count me in!

Favorite Simple Indulgence: Flourless Chocolate Cake  It’s so simple yet so gratifying ~ the dense chocolatey slice just makes me smile

Favorite Steakhouse Dressing: Outback Steakhouse Ranch I seriously have a total obsession with GOOD ranch.  For me it can easily define the difference between choosing a restaurant.  Ranchaholic and proud of it!   Here is another fabulous Ranchtastic recipe 🙂

Favorite Breakfast in a cup: Baked Blueberry French Toast This is perfect for the easy Saturday morning breakfast for the whole family!  Baked crunchy bread with a center of blueberries & cream cheese in the middle YUM!

Favorite Bite: Mini Caprese Bites This tops my lists of food combinations that make me extremely happy!  To have it all in a single bite- heaven!

Favorite New Party Idea: Mediterranean 7-Layer Dip I grew up in Texas so 7-Layer dip has been a part of my being since I was born!  This new twist beyond excites me!

Favorite Brunch Idea: Customizable Breakfast Bread Bowls This is truly exciting because the options are endless and your guests will have so much fun picking out their own perfect bowl!

Favorite Eggs Benedict Twist: Eggs Chesapeake   I am typically a purist when it comes to Eggs Benedict but this is definitely something I am willing to indulge in!

Favorite Tacos: Slow-braised Short Rib Tacos These look beyond mouth watering and the idea of the pickled red onion totally excites me!

Favorite Grilled Cheese Idea: French Onion Soup Grilled Cheese My favorite soup flavor and with gooey cheese and toasty bread….sign me up!

Favorite Cutie Pie Dessert: M&M Cookie Dough Cups  Is there really anything else that needs to be said?!

As I sit here enjoying this beautiful day at Sandestin drinking my skinny mocha and contemplating the day’s activities sans the sun since my little person got a little rosy yesterday…I have lots of fun pictures to share!

Happy Friday Everyone!

Not only is this a fabulous Friday but here in Dallas today is the last day of school before Spring Break!  We are packing the car and getting ready to get outta town….so excited!

But before I spend the next 12 hours in the car with an almost 5-year-old ~ I thought a moment of sanity was well deserved and a little gawking was necessary!

Favorite bad day remedy

Trashy Brownies aka $!utty brownies.  Kristin over at Iowa Girl Eats profiled a version of these on her Friday Favorites a couple of weeks ago and I have not gotten them out of my head.  These will make any bad day instantly better.

Favorite Spicy Finger Food

Spicy Chicken Flautas with lime sour cream These are pretty much a staple in our Tex Mex diet and the lime sour cream sounds so refreshing!

Favorite 3 minute dessert

Cinnamon Roll Mug Cake 3 minutes in a mug and DONE.  NUFF SAID!

Deep Fried Ravioli on a stick  Everyone loves food on a stick.  It is portable and lets you have one hand free for a cocktail!

Seared Scallop Salad


I was at the market yesterday and I saw some beautiful Sea Scallops and knew that a salad was in order for dinner but I wasn’t sure how it was all going to come together…..I think it came out pretty well

It was so super simple!  The hardest part is chopping up all the veggies for the salad and making the buttermilk dressing!

I don’t have any step-by-step pictures of this process because it all happened so fast and I wasn’t planning :/  But there is always next time and that is when I add more veggies like charred corn and avocado;)

Seared Scallop Salad with Buttermilk Dressing

Serves 2

10 Sea Scallops, patted dry

1 tsp olive oil

1 tsp butter

1/2 tablespoon Penzey’s Trinidad lemon seasoning

1 tsp cracked black pepper

1 – 1 1/2 cups baby romaine

2 scallions, finely chopped

1 stalk of celery, finely diced

1 vine tomato, diced

4 white mushrooms, wiped with a dry cloth and sliced

5 sprigs of cilantro, chopped (stems & all)

1 1/2 tablespoons Garlic Pepper Crispy Onions (Fresh Gourmet)

1 tablespoon low-fat buttermilk

1 tablespoon Hellman’s mayonnaise

2 tsp Old Bay

1/2 tablespoon Apple Cider Vinegar

Chop up all your veggies for your salad first and make your dressing as this will take much longer than the scallops.

In a small bowl add baby romaine, scallions, tomato, celery, shrooms, cilantro & crispy onions, set aside

In a smaller bowl mix the buttermilk, mayo, cider vinegar & old bay and whisk, set aside

In a non-stick skillet, over medium high heat, add olive oil & butter.  Let it get hot without burning the butter  (the olive oil should help but keep your eye on it) and season the PATTED DRY scallops (this is crucial to get the color you want) with the Trinidad seasoning and cracked pepper.  Put the scallops in and set timer for 2 minutes and turn down the burner to medium.  Turn over the scallops- you should have a beautiful caramel color sear on them and you will cook them another 2 minutes

Toss the dressing with the salad and place the scallops on top with a squirt of lemon

Your plate will look like this after you inhale this salad.  BTW a nice Pinot Grigio is the perfect wine choice for this!
